- 2 large sweet potatoes peeled and grated
- 1 small onion grated
- 2 large eggs beaten
- ¼ cup flour
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup vegetable oil for frying
1. Grate the sweet potatoes and onion into a mixing bowl.
2. Add the beaten eggs, flour, salt, and pepper. Mix well.
3. Heat the vegetable oil in a frying pan over medium heat.
4. Scoop spoonfuls of the mixture into the pan and flatten them with a spatula.
5. Fry until golden brown on both sides, about 3-4 minutes per side.
6. Remove and drain on paper towels. Serve hot.
