  • 1 cup corn kernels fresh or frozen
  • ½ cup flour
  • 2 units eggs beaten
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup chopped green onions
  • 2 tablespoon olive oil for frying

Instructions 

  1. 1. In a mixing bowl, combine grated sweet potatoes, corn kernels, flour, beaten eggs, salt, pepper, and chopped green onions.
  2. 2. Heat olive oil in a frying pan over medium heat.
  3. 3. Scoop a spoonful of the mixture into the pan and flatten it slightly. Cook for 3-4 minutes on each side until golden brown.
