- 2 cups grated sweet potatoes
- 1 cup corn kernels fresh or frozen
- ½ cup flour
- 2 units eggs beaten
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ cup chopped green onions
- 2 tablespoon olive oil for frying
1. In a mixing bowl, combine grated sweet potatoes, corn kernels, flour, beaten eggs, salt, pepper, and chopped green onions.
2. Heat olive oil in a frying pan over medium heat.
3. Scoop a spoonful of the mixture into the pan and flatten it slightly. Cook for 3-4 minutes on each side until golden brown.
4. Remove fritters from the pan and drain on paper towels. Serve warm.
