Ingredients 

Main Ingredients

  • 2 large Sweet Potatoes peeled and chopped
  • 1 can Coconut Milk full-fat
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 3 cups Vegetable Broth
  • 1 tablespoon Olive Oil
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Salt to taste
  • 0.5 teaspoon Black Pepper to taste

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, and sauté until softened.
  2. 2. Add chopped sweet potatoes, ground cumin, salt, and black pepper. Cook for a few minutes, stirring occasionally.
  3. 3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer until sweet potatoes are tender, about 20 minutes.
  4. 4. Remove from heat and let cool slightly. Use a blender to puree the soup until smooth.
  5. 5. Return the soup to the pot, stir in the coconut milk, and heat through. Adjust seasoning if needed.
  6. 6. Serve hot, garnished with fresh herbs if desired.
