  • 1 cup mashed sweet potatoes
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ¼ cup sugar
  • ½ cup butter, cold and cubed
  • ½ cup milk

Instructions 

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine the flour, baking powder, salt, and sugar.
  3. Cut in the cold, cubed butter until the mixture resembles coarse crumbs.
  4. Add the mashed sweet potatoes and milk. Stir until just combined.
  5. Turn the dough out onto a floured surface and knead gently a few times.
  6. Pat the dough to about ½ inch thickness and cut with a biscuit cutter.
  7. Place the biscuits on a baking sheet and bake for 12-15 minutes or until golden brown.
