Ingredients 

Main Ingredients

  • 2 large Sweet Potatoes peeled and chopped
  • 3 large Carrots peeled and chopped
  • ½ cup Brown Sugar
  • ½ cup Heavy Cream
  • 2 Eggs beaten
  • 1 teaspoon Cinnamon
  • ½ teaspoon Nutmeg
  • ¼ teaspoon Salt
  • 1 Pie Crust store-bought or homemade

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. Peel and chop sweet potatoes and carrots. Boil until tender, about 15 minutes.
  3. Drain and mash sweet potatoes and carrots in a large bowl.
  4. Add brown sugar, heavy cream, eggs, cinnamon, nutmeg, and salt. Mix well.
  5. Pour mixture into pie crust.
  6. Bake for 45 minutes or until set.
  7. Let cool before serving.
