Sweet Potato and Carrot Pie
A delicious and nutritious pie made with sweet potatoes and carrots.

Main Ingredients
- 2 large Sweet Potatoes peeled and chopped
- 3 large Carrots peeled and chopped
- ½ cup Brown Sugar
- ½ cup Heavy Cream
- 2 Eggs beaten
- 1 teaspoon Cinnamon
- ½ teaspoon Nutmeg
- ¼ teaspoon Salt
- 1 Pie Crust store-bought or homemade
Preheat oven to 350°F (175°C).
Peel and chop sweet potatoes and carrots. Boil until tender, about 15 minutes.
Drain and mash sweet potatoes and carrots in a large bowl.
Add brown sugar, heavy cream, eggs, cinnamon, nutmeg, and salt. Mix well.
Pour mixture into pie crust.
Bake for 45 minutes or until set.
Let cool before serving.
