Ingredients 

Main Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • ½ cup cornstarch
  • 1 cup pineapple chunks drained
  • 1 medium bell pepper, cut into chunks
  • 1 medium onion, cut into chunks

Sauce Ingredients

  • ½ cup ketchup
  • ¼ cup rice vinegar
  • ¼ cup soy sauce
  • ¼ cup brown sugar
  • 1 tablespoon cornstarch mixed with 2 tablespoon water

Instructions 

  1. 1. Coat chicken pieces in cornstarch.
  2. 2. Heat oil in a large skillet over medium-high heat. Cook chicken until golden and cooked through.
  3. 3. Add bell pepper and onion to the skillet. Cook until vegetables are tender.
  4. 4. In a bowl, whisk together ketchup, rice vinegar, soy sauce, brown sugar, and cornstarch mixture.
  5. 5. Pour sauce over chicken and vegetables. Add pineapple chunks. Stir until sauce thickens.
  6. 6. Serve hot over rice.
