  • 1 piece Pork Loin about 2 pounds
  • 1 cup Spinach chopped
  • ½ cup Feta Cheese crumbled
  • 1 tablespoon Olive Oil
  • 2 cloves Garlic minced
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Butterfly the pork loin by slicing it lengthwise, but not all the way through, and open it like a book.
  3. Season the inside with salt and pepper.
  4. In a pan, heat olive oil over medium heat and sauté garlic until fragrant. Add spinach and cook until wilted.
  5. Spread the spinach mixture and feta cheese evenly over the pork loin.
  6. Roll up the pork loin and tie it with string to secure.
  7. Place the pork loin in a baking dish and roast for about 60 minutes, or until the internal temperature reaches 145°F (63°C).
  8. Let it rest for 10 minutes before slicing and serving.
