- 4 bell peppers
- 1 lb ground beef
- 1 cup cooked rice
- 1 can diced tomatoes
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup shredded cheese
Preheat oven to 375°F (190°C).
Cut the tops off the bell peppers and remove seeds.
In a skillet, cook ground beef until browned. Drain fat.
Add onion and garlic to the skillet, cook until softened.
Stir in cooked rice, diced tomatoes, salt, and pepper.
Stuff the bell peppers with the beef mixture.
Place stuffed peppers in a baking dish, cover with foil.
Bake for 35 minutes. Remove foil, sprinkle cheese on top.
Bake for an additional 10 minutes, until cheese is melted.
