Main Ingredients
- 2 whole Avocados halved and pitted
- 1 cup Cherry tomatoes diced
- ¼ cup Red onion finely chopped
- ¼ cup Cilantro chopped
- 1 tablespoon Lime juice freshly squeezed
- 1 pinch Salt to taste
- 1 pinch Black pepper to taste
Scoop out some of the avocado flesh to create a larger cavity for stuffing.
In a bowl, mix the diced tomatoes, red onion, cilantro, lime juice, salt, and pepper.
Fill the avocado halves with the mixture.
Serve immediately and enjoy!
