Ingredients

  • 2 whole Avocados halved and pitted
  • 1 cup Cherry tomatoes diced
  • ¼ cup Red onion finely chopped
  • ¼ cup Cilantro chopped
  • 1 tablespoon Lime juice freshly squeezed
  • 1 pinch Salt to taste
  • 1 pinch Black pepper to taste

Instructions 

  1. Scoop out some of the avocado flesh to create a larger cavity for stuffing.
  2. In a bowl, mix the diced tomatoes, red onion, cilantro, lime juice, salt, and pepper.
  3. Fill the avocado halves with the mixture.
  4. Serve immediately and enjoy!
