Ingredients 

Muffin Batter

  • 1.5 cups all-purpose flour
  • 0.75 cup sugar
  • 0.5 teaspoon salt
  • 2 teaspoons baking powder
  • 0.33 cup vegetable oil
  • 1 large egg
  • 0.33 cup milk
  • 1 cup fresh blueberries

Streusel Topping

  • 0.5 cup sugar
  • 0.33 cup all-purpose flour
  • 0.25 cup butter, cubed
  • 1.5 teaspoons ground cinnamon

Instructions 

  1. Preheat your oven to 400°F (200°C). Grease a muffin tin or line with paper liners.
  2. In a large bowl, whisk together flour, sugar, salt, and baking powder.
  3. In another bowl, whisk together vegetable oil, egg, and milk. Add to the flour mixture and stir until just combined. Fold in the blueberries.
  4. Fill muffin cups right to the top, and sprinkle with streusel topping mixture.
  5. To make streusel topping: Mix together sugar, flour, butter, and cinnamon. Mix with fork, and sprinkle over muffins before baking.
  6. Bake for 20 to 25 minutes in the preheated oven, or until done.
