Ingredients 

Shortcake Biscuits

  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, cold and cubed
  • cup whole milk

Strawberry Filling

  • 1 lb fresh strawberries, hulled and sliced
  • ¼ cup granulated sugar

Whipped Cream

  • 1 cup heavy whipping cream
  • 2 tablespoon powdered sugar
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat oven to 425°F (220°C).
  2. In a mixing bowl, combine flour, sugar, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Gradually add milk, stirring until just combined. Do not overmix.
  4. Drop dough by spoonfuls onto a baking sheet. Bake for 12-15 minutes or until golden brown. Let cool.
  5. In a bowl, mix strawberries with sugar and let sit for at least 30 minutes.
  6. In another bowl, whip the cream with powdered sugar and vanilla until soft peaks form.
  7. To assemble, split the biscuits in half, top with strawberries and whipped cream, then place the other half of the biscuit on top.
