Ingredients 

Crust

  • 1 cup all-purpose flour
  • ¼ cup sugar
  • ½ cup unsalted butter cold and cubed

Filling

  • 2 cups strawberries hulled and chopped
  • 2 cups rhubarb chopped
  • ½ cup sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a baking dish.
  2. In a mixing bowl, combine flour and sugar for the crust. Cut in the cold butter until the mixture resembles coarse crumbs. Press into the prepared baking dish.
  3. Bake the crust for 15 minutes or until lightly golden. Remove from oven and set aside.
  4. In another bowl, mix strawberries, rhubarb, sugar, cornstarch, and vanilla extract. Spread the mixture over the baked crust.
  5. Bake for an additional 25 minutes or until the filling is bubbly and the top is golden brown. Let cool before cutting into bars.
