- 1 package store-bought pie crust
- 2 cups sliced strawberries
- 2 cups sliced peaches
- ¼ cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon lemon juice
- 1 teaspoon vanilla extract
- 1 egg beaten, for egg wash
- 1 tablespoon coarse sugar for sprinkling
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine the strawberries, peaches, granulated sugar, cornstarch, lemon juice, and vanilla extract. Toss to coat the fruit evenly.
Roll out the pie crust on a lightly floured surface to about 12 inches in diameter. Transfer it to the prepared baking sheet.
Place the fruit mixture in the center of the pie crust, leaving about a 2-inch border around the edges.
Fold the edges of the crust over the fruit, pleating as necessary to create a rustic look.
Brush the crust with the beaten egg and sprinkle with coarse sugar.
Bake for 35-40 minutes, or until the crust is golden brown and the fruit is bubbly.
Allow the galette to cool slightly before slicing and serving.
