Ingredients 

Crust

  • 1.5 cups all-purpose flour
  • 0.5 cup unsalted butter cold and cubed
  • 0.25 cup granulated sugar
  • 1 pinch salt

Filling

  • 1 cup lemon juice freshly squeezed
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 tablespoon lemon zest
  • 1 cup heavy cream

Topping

  • 2 cups fresh strawberries sliced

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.
  3. Press the mixture into a tart pan. Bake for 15 minutes or until golden brown. Let it cool.
  4. In another bowl, whisk together lemon juice, sugar, eggs, lemon zest, and heavy cream until smooth.
  5. Pour the filling into the cooled crust. Bake for 25-30 minutes or until set. Let it cool completely.
  6. Top with sliced strawberries before serving.
