Ingredients 

Cupcakes

  • 1.5 cups all-purpose flour
  • 1 cup sugar
  • 1.5 teaspoon baking powder
  • 0.5 cup unsalted butter, softened
  • 2 large eggs
  • 0.5 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped

Buttercream

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 0.25 cup fresh strawberries, pureed
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a mixing bowl, whisk together flour, sugar, and baking powder.
  3. Add softened butter and mix until the mixture is crumbly.
  4. In another bowl, whisk together eggs, milk, and vanilla extract. Gradually add this to the flour mixture and mix until smooth.
  5. Fold in the chopped strawberries.
  6. Fill cupcake liners ⅔ full and bake for 20 minutes or until a toothpick comes out clean.
  7. Let cupcakes cool completely before frosting.
  8. For the buttercream, beat the softened butter until creamy. Gradually add powdered sugar, pureed strawberries, and vanilla extract. Beat until smooth and fluffy.
  9. Pipe the buttercream onto the cooled cupcakes and enjoy!
