- 2 cups All-purpose flour
- 1 teaspoon Baking soda
- ½ teaspoon Salt
- ½ cup Unsalted butter, softened
- ¾ cup Brown sugar
- 2 Large eggs
- 1 teaspoon Vanilla extract
- 2 cups Mashed bananas (about 4 ripe bananas)
- 1 cup Chopped strawberries
Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
In a mixing bowl, whisk together the flour, baking soda, and salt. Set aside.
In another bowl, cream the butter and brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Mix in the mashed bananas until well combined. Gradually add the flour mixture, mixing just until incorporated. Fold in the chopped strawberries.
Pour the batter into the prepared loaf pan. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
