St. Patrick's Day Shamrock Cookies

Cookie Dough
- 1 cup unsalted butter softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 2 cups all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
Decoration
- 1 tube green icing
- 1 tube white icing
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a mixing bowl, cream together the butter and sugar until light and fluffy.
Beat in the egg and vanilla extract until well combined.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
Roll out the dough on a floured surface to about ¼-inch thickness. Use a shamrock-shaped cookie cutter to cut out cookies and place them on the prepared baking sheet.
Bake for 8-10 minutes, or until the edges are lightly golden. Allow cookies to cool on the baking sheet for a few minutes before transferring to a cooling rack to cool completely.
Once cooled, decorate the cookies with green and white icing as desired.
