Ingredients 

Cookie Dough

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 2 cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

Decoration

  • 1 tube green icing
  • 1 tube white icing

Instructions 

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  6. Roll out the dough on a floured surface to about ¼-inch thickness. Use a shamrock-shaped cookie cutter to cut out cookies and place them on the prepared baking sheet.
  7. Bake for 8-10 minutes, or until the edges are lightly golden. Allow cookies to cool on the baking sheet for a few minutes before transferring to a cooling rack to cool completely.
  8. Once cooled, decorate the cookies with green and white icing as desired.
