  • 8 eggs
  • 1 cup fresh spinach chopped
  • 1 cup mushrooms sliced
  • ½ cup onion chopped
  • ½ cup milk
  • ½ cup cheese grated
  • 1 tablespoon olive oil
  • to taste salt
  • to taste black pepper

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add onions and cook until translucent.
  3. Add mushrooms and cook until they release their moisture and start to brown.
  4. Add spinach and cook until wilted. Remove from heat.
  5. In a mixing bowl, whisk together eggs, milk, salt, and pepper.
  6. Stir in the cooked vegetables and cheese.
  7. Pour the mixture into a greased oven-safe skillet or baking dish.
  8. Bake for 20 minutes or until the frittata is set and golden on top.
  9. Let it cool slightly before slicing and serving.
