  • 2 large eggs
  • 0.5 cup fresh spinach, chopped
  • 0.25 cup feta cheese, crumbled
  • 1 tablespoon olive oil
  • to taste Salt and pepper

Instructions 

  1. Whisk the eggs in a bowl with a pinch of salt and pepper.
  2. Heat olive oil in a non-stick skillet over medium heat.
  3. Add spinach and cook until wilted, about 2 minutes.
  4. Pour the eggs over the spinach and cook until the edges start to set.
  5. Sprinkle feta cheese on one half of the omelette.
  6. Fold the omelette in half and cook for another 2-3 minutes until fully set.
  7. Serve hot.
