Ingredients

  • 2 cups spinach, chopped
  • 1 cup feta cheese, crumbled
  • 2 eggs beaten
  • ½ cup flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoon olive oil for frying

Instructions 

  1. 1. In a mixing bowl, combine spinach, feta, and beaten eggs.
  2. 2. Add flour, baking powder, salt, and pepper. Mix well.
  3. 3. Heat olive oil in a frying pan over medium heat.
  4. 4. Drop spoonfuls of the mixture into the pan, flattening slightly with a spatula.
  5. 5. Cook for 2-3 minutes on each side, until golden brown.
  6. 6. Remove from pan and drain on paper towels. Serve warm.
