Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 5 ounces fresh spinach
  • 6 large eggs
  • ¼ cup milk
  • ½ cup crumbled feta cheese
  • Salt and pepper to taste

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in an oven-safe skillet over medium heat. Add onion and garlic, cook until softened.
  3. Add spinach, cook until wilted.
  4. In a bowl, whisk together eggs, milk, salt, and pepper. Pour over spinach mixture.
  5. Sprinkle feta cheese on top.
  6. Transfer skillet to the oven and bake for 15-20 minutes, or until eggs are set.
