Ingredients

  • 6 eggs
  • 2 cups fresh spinach chopped
  • 2 potatoes peeled and thinly sliced
  • 1 onion chopped
  • 1 cup cheese grated (optional)
  • 2 tablespoon olive oil
  • to taste salt and pepper

Instructions 

  1. 1. Preheat your oven to 375°F (190°C).
  2. 2. Heat olive oil in a skillet over medium heat. Add the potatoes and onions, cooking until tender.
  3. 3. Add the spinach to the skillet and cook until wilted.
  4. 4. In a bowl, whisk the eggs, then pour them into the skillet. Stir gently to combine with the vegetables.
  5. 5. Sprinkle cheese on top, if using. Transfer the skillet to the oven and bake for 10-15 minutes, or until the eggs are set.
  6. 6. Remove from the oven, let it cool slightly, then slice and serve.
