Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 cup chopped onions
  • 2 cups sliced mushrooms
  • 5 cups fresh spinach
  • 6 slices bread, cubed
  • 1 cup shredded cheese
  • 6 eggs
  • 2 cups milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. Heat olive oil in a pan over medium heat. Add onions and cook until translucent.
  3. Add mushrooms and cook until they release their moisture and start to brown.
  4. Add spinach and cook until wilted. Remove from heat.
  5. In a large mixing bowl, whisk together eggs, milk, salt, and pepper.
  6. Add bread cubes, cooked vegetables, and cheese to the bowl. Mix well.
  7. Pour mixture into a greased baking dish.
  8. Bake for 45 minutes or until the top is golden and the center is set.
  9. Let it cool for a few minutes before serving.
