  • 1 cup Spinach fresh, chopped
  • 1 cup Mushrooms sliced
  • 1 tablespoon Olive oil
  • to taste Salt
  • to taste Black pepper

Instructions 

  1. 1. In a mixing bowl, beat the eggs with a pinch of salt and pepper.
  2. 2. Heat olive oil in a non-stick skillet over medium heat.
  3. 3. Add mushrooms and cook until soft, about 3-4 minutes.
  4. 4. Add spinach and cook until wilted, about 2 minutes.
  5. 5. Pour the beaten eggs into the skillet and cook until the eggs are set, about 3-4 minutes.
  6. 6. Fold the omelette in half and serve hot.
