Spicy Thai Peanut Zoodles

Main Ingredients
- 2 medium zucchini spiralized into noodles
- ½ cup peanut butter
- 2 tablespoon soy sauce
- 1 tablespoon sriracha
- 1 tablespoon lime juice freshly squeezed
- 1 clove garlic minced
- 1 teaspoon ginger grated
- ¼ cup water to thin the sauce
- 2 tablespoon chopped peanuts for garnish
- 2 tablespoon chopped cilantro for garnish
1. Spiralize the zucchini into noodles using a spiralizer.
2. In a mixing bowl, whisk together peanut butter, soy sauce, sriracha, lime juice, garlic, ginger, and water until smooth.
3. Heat a pan over medium heat and add the zucchini noodles. Cook for 2-3 minutes until slightly tender.
4. Pour the peanut sauce over the noodles and toss to coat evenly. Cook for another 2 minutes.
5. Serve immediately, garnished with chopped peanuts and cilantro.
