Ingredients 

Main Ingredients

  • 2 medium zucchini spiralized into noodles
  • ½ cup peanut butter
  • 2 tablespoon soy sauce
  • 1 tablespoon sriracha
  • 1 tablespoon lime juice freshly squeezed
  • 1 clove garlic minced
  • 1 teaspoon ginger grated
  • ¼ cup water to thin the sauce
  • 2 tablespoon chopped peanuts for garnish
  • 2 tablespoon chopped cilantro for garnish

Instructions 

  1. 1. Spiralize the zucchini into noodles using a spiralizer.
  2. 2. In a mixing bowl, whisk together peanut butter, soy sauce, sriracha, lime juice, garlic, ginger, and water until smooth.
  3. 3. Heat a pan over medium heat and add the zucchini noodles. Cook for 2-3 minutes until slightly tender.
  4. 4. Pour the peanut sauce over the noodles and toss to coat evenly. Cook for another 2 minutes.
  5. 5. Serve immediately, garnished with chopped peanuts and cilantro.
