Spicy Potatoes and Scrambled Eggs
A quick and spicy breakfast option with potatoes and scrambled eggs.

Main Ingredients
- 2 medium potatoes diced
- 4 large eggs
- 1 small onion chopped
- 1 small bell pepper chopped
- 1 teaspoon chili powder
- to taste salt and pepper
- 2 tablespoon olive oil
- 1 tablespoon fresh parsley chopped (optional)
Heat olive oil in a pan over medium heat.
Add diced potatoes and cook until golden brown, about 10 minutes.
Add chopped onion and bell pepper, cook until softened.
Sprinkle chili powder, salt, and pepper. Stir well.
In a bowl, whisk eggs with a pinch of salt.
Push veggies to one side of the pan and pour eggs into the other side.
Scramble eggs until cooked, then mix with veggies.
Garnish with fresh parsley if desired.
