Crust
- 1.5 cups all-purpose flour
- 0.5 cup unsalted butter cold, cut into cubes
- 0.25 cup granulated sugar
- 1 unit egg yolk
- 2 tablespoon ice water
Filling
- 2 cups pumpkin puree
- 0.75 cup brown sugar packed
- 2 unit eggs beaten
- 1 teaspoon ground cinnamon
- 0.5 teaspoon ground ginger
- 0.25 teaspoon ground cloves
- 0.5 teaspoon salt
- 1 cup heavy cream
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine flour and sugar for the crust. Add the cold butter and mix until the mixture resembles coarse crumbs.
Add the egg yolk and ice water to the mixture. Mix until the dough comes together.
Press the dough into a tart pan. Bake for 15 minutes, then let it cool.
In another bowl, combine pumpkin puree, brown sugar, beaten eggs, spices, and salt. Mix well.
Gradually add the heavy cream to the pumpkin mixture, stirring constantly.
Pour the filling into the cooled crust. Bake for 45 minutes or until the filling is set.
