  • 4 medium potatoes peeled and thinly sliced
  • 1 medium onion thinly sliced
  • 5 large eggs
  • ½ cup olive oil
  • to taste salt

Instructions 

  1. Peel and thinly slice the potatoes and onion.
  2. Heat olive oil in a large pan over medium heat.
  3. Add potatoes and onion, cook until soft.
  4. Beat the eggs in a bowl, add salt.
  5. Drain potatoes and onion, mix with eggs.
  6. Pour mixture back into the pan, cook on low heat until set.
  7. Flip the omelet to cook the other side.
