Spanish Potato Omelet Recipe
A classic Spanish dish made with potatoes, onions, and eggs.

- 4 medium potatoes peeled and thinly sliced
- 1 medium onion thinly sliced
- 5 large eggs
- ½ cup olive oil
- to taste salt
Peel and thinly slice the potatoes and onion.
Heat olive oil in a large pan over medium heat.
Add potatoes and onion, cook until soft.
Beat the eggs in a bowl, add salt.
Drain potatoes and onion, mix with eggs.
Pour mixture back into the pan, cook on low heat until set.
Flip the omelet to cook the other side.
