Ingredients

  • 400 g spaghetti
  • 200 g pancetta diced
  • 2 large eggs
  • 1 egg yolk
  • 100 g Parmesan cheese grated
  • 2 cloves garlic minced
  • to taste salt
  • to taste black pepper freshly ground

Instructions 

  1. 1. Cook the spaghetti in a large pot of salted boiling water until al dente. Reserve 1 cup of pasta water and drain the rest.
  2. 2. In a skillet, cook the pancetta over medium heat until crispy. Add minced garlic and cook for another minute.
  3. 3. In a mixing bowl, whisk together the eggs, egg yolk, and grated Parmesan cheese.
  4. 4. Add the cooked spaghetti to the skillet with pancetta and garlic. Remove from heat and quickly pour in the egg and cheese mixture, tossing to coat the pasta. Add reserved pasta water a little at a time to create a creamy sauce.
  5. 5. Season with salt and freshly ground black pepper to taste. Serve immediately.
