Ingredients

  • 2 cups cooked chicken, chopped
  • 1 cup corn kernels fresh or frozen
  • 1 cup black beans rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 cup diced bell pepper
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup diced avocado
  • 1 cup chopped romaine lettuce
  • ½ cup cilantro, chopped
  • ¼ cup lime juice freshly squeezed
  • ¼ cup olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. In a large mixing bowl, combine the chicken, corn, black beans, cherry tomatoes, bell pepper, cheese, avocado, romaine lettuce, and cilantro.
  2. In a small bowl, whisk together the lime juice, olive oil, cumin, chili powder, salt, and black pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve immediately or refrigerate for later.
