- 1 cup all-purpose flour
- ½ cup sugar
- ¼ cup butter softened
- 1 teaspoon vanilla extract
- 1 large egg
- ½ teaspoon baking powder
- ¼ teaspoon salt
Coating
- 2 cups chocolate chips melted
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a mixing bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
In another bowl, whisk together the flour, baking powder, and salt. Gradually add to the butter mixture, mixing until combined.
Drop spoonfuls of dough onto the prepared baking sheet, flattening each slightly. Bake for 10 minutes or until edges are golden brown. Let cool completely.
Spread marshmallow creme on the flat side of half the cookies. Top with remaining cookies to form sandwiches.
Dip each sandwich in melted chocolate, covering completely. Place on parchment paper to set.
