Ingredients 

Main Ingredients

  • 6 large eggs
  • 0.5 cup cottage cheese
  • 0.5 cup shredded cheese cheddar, mozzarella, or your choice
  • 0.25 cup cooked bacon bits or diced ham
  • to taste salt and pepper
  • as needed non-stick cooking spray

Instructions 

  1. Preheat your sous vide machine to 172°F (78°C).
  2. In a blender, combine eggs, cottage cheese, shredded cheese, salt, and pepper. Blend until smooth.
  3. Spray silicone molds with non-stick cooking spray.
  4. Pour the egg mixture into the molds, filling each about ¾ full.
  5. Add bacon bits or diced ham to each mold.
  6. Cover the molds with aluminum foil.
  7. Place the molds in a vacuum-seal bag and seal.
  8. Submerge the bag in the preheated water bath and cook for 1 hour.
  9. Remove the molds from the bag and let cool slightly before removing the egg bites.
