Sous Vide Egg Bites Recipe

Main Ingredients
- 6 large eggs
- 0.5 cup cottage cheese
- 0.5 cup shredded cheese cheddar, mozzarella, or your choice
- 0.25 cup cooked bacon bits or diced ham
- to taste salt and pepper
- as needed non-stick cooking spray
Preheat your sous vide machine to 172°F (78°C).
In a blender, combine eggs, cottage cheese, shredded cheese, salt, and pepper. Blend until smooth.
Spray silicone molds with non-stick cooking spray.
Pour the egg mixture into the molds, filling each about ¾ full.
Add bacon bits or diced ham to each mold.
Cover the molds with aluminum foil.
Place the molds in a vacuum-seal bag and seal.
Submerge the bag in the preheated water bath and cook for 1 hour.
Remove the molds from the bag and let cool slightly before removing the egg bites.
