Sour Cream Cheesecake

Crust
- 1.5 cups Graham cracker crumbs
- 0.25 cup Sugar
- 0.5 cup Melted butter
Filling
- 16 oz Cream cheese softened
- 1 cup Sugar
- 1 teaspoon Vanilla extract
- 3 Eggs
- 1 cup Sour cream
Preheat oven to 325°F (165°C).
In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of a springform pan.
In another bowl, beat the cream cheese and sugar until smooth. Add vanilla extract and mix well.
Add eggs one at a time, beating well after each addition. Stir in sour cream until just blended.
Pour the filling over the crust in the springform pan.
Bake in preheated oven for 60 minutes. Turn off the oven and let the cheesecake cool in the oven with the door slightly open for 1 hour.
Chill in the refrigerator for at least 4 hours before serving.
