- 3 tablespoon Butter plus extra for greasing
- 3 tablespoon Flour
- 1 cup Milk warmed
- 4 Eggs separated
- ½ cup Grated cheese
- ¼ teaspoon Salt
- ¼ teaspoon Pepper
Preheat your oven to 375°F (190°C). Grease the ramekins with butter and set aside.
In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes.
Gradually whisk in the warmed milk until smooth and thickened. Remove from heat.
Beat the egg yolks and gradually add to the mixture, stirring constantly. Add the grated cheese, salt, and pepper.
In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the mixture.
Spoon the mixture into the prepared ramekins. Place the ramekins on a baking sheet and bake for 20-25 minutes, until puffed and golden.
Serve immediately.
