Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup pumpkin puree
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, beat butter and sugar until light and fluffy. Add pumpkin, egg, and vanilla, and mix well.
  4. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  5. Drop dough by tablespoonfuls onto a baking sheet.
  6. Bake for 15 minutes or until edges are golden. Cool on wire racks.
