Ingredients 

Pretzel Dough

  • 1 ½ cups warm water 110°F
  • 1 packet active dry yeast 2 ¼ teaspoons
  • 1 tablespoon granulated sugar
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • ¼ cup baking soda
  • 1 large egg yolk beaten with 1 tablespoon water
  • 2 tablespoons unsalted butter melted
  • to taste coarse salt for sprinkling

Instructions 

  1. In a large mixing bowl, combine warm water, yeast, and sugar. Let sit for 5 minutes until foamy.
  2. Add flour and salt to the yeast mixture. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
  5. Preheat oven to 450°F (230°C). Line a baking sheet with parchment paper.
  6. In a large pot, bring 10 cups of water and the baking soda to a boil.
  7. Divide the dough into 8 pieces. Roll each piece into a rope and shape into a pretzel.
  8. Boil each pretzel in the baking soda water for 30 seconds. Remove with a slotted spoon and place on the prepared baking sheet.
  9. Brush each pretzel with the egg yolk mixture and sprinkle with coarse salt.
  10. Bake for 12-15 minutes or until golden brown. Brush with melted butter and serve warm.
