Ingredients 

Cookies

  • 1 cup Butter softened
  • 1.5 cups Sugar
  • 2 units Eggs
  • 2.75 cups All-purpose flour
  • 2 teaspoon Cream of tartar
  • 1 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 2 teaspoon Cinnamon
  • 1 quart Vanilla ice cream

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, cream together butter and 1.5 cups sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition.
  4. In another bowl, whisk together flour, cream of tartar, baking soda, and salt. Gradually add to the butter mixture, mixing until combined.
  5. In a small bowl, mix 2 tablespoon sugar and 2 teaspoon cinnamon. Roll dough into balls and coat with cinnamon-sugar mixture.
  6. Place on baking sheet and bake for 8-10 minutes. Let cookies cool completely.
  7. Scoop ice cream onto one cookie and top with another to make a sandwich. Repeat with remaining cookies and ice cream.
