Ingredients

  • 2 medium zucchini spiralized
  • ½ lb shrimp peeled and deveined
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • ¼ teaspoon red pepper flakes
  • to taste salt and pepper
  • 1 tablespoon lemon juice freshly squeezed

Instructions 

  1. 1. Spiralize the zucchini to create zoodles.
  2. 2. Heat olive oil in a skillet over medium heat. Add garlic and red pepper flakes, and sauté for 1 minute.
  3. 3. Add shrimp to the skillet and cook until pink, about 3-4 minutes.
  4. 4. Add zoodles to the skillet and toss to combine. Cook for another 2-3 minutes until zoodles are tender.
  5. 5. Season with salt, pepper, and lemon juice. Serve immediately.
