Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 2 Avocados, diced
  • 1 cup Cherry tomatoes, halved
  • ¼ cup Red onion, finely chopped
  • 2 tablespoon Olive oil
  • 1 tablespoon Lime juice
  • 1 clove Garlic, minced
  • to taste Salt and pepper

Instructions 

  1. 1. Heat a skillet over medium heat and cook the shrimp until pink and opaque, about 2-3 minutes per side. Set aside to cool.
  2. 2. In a large mixing bowl, combine the diced avocados, cherry tomatoes, and red onion.
  3. 3. Add the cooled shrimp to the bowl.
  4. 4. In a small bowl, whisk together the olive oil, lime juice, minced garlic, salt, and pepper.
  5. 5. Pour the dressing over the salad and toss gently to combine.
  6. 6. Serve immediately or chill in the refrigerator for 30 minutes before serving.
