Ingredients 

Main Ingredients

  • 1 tablespoon Butter
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 2 Potatoes, peeled and diced
  • 2 cups Fish stock
  • 1 cup Heavy cream
  • 1 cup Corn kernels
  • 1 lb Mixed seafood (shrimp, clams, fish), cleaned and chopped
  • to taste Salt and pepper
  • 2 tablespoon Fresh parsley, chopped

Instructions 

  1. 1. In a large pot, melt the butter over medium heat.
  2. 2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. 3. Add the minced garlic and cook for another minute.
  4. 4. Stir in the diced potatoes and fish stock. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
  5. 5. Add the heavy cream and corn kernels. Simmer for another 5 minutes.
  6. 6. Add the mixed seafood and cook until just done, about 3-5 minutes. Season with salt and pepper to taste.
  7. 7. Garnish with fresh parsley and serve hot.
