Preheat your oven to 375°F (190°C).
Brown the sausages in a pan over medium heat, then set aside.
In the same pan, sauté the chopped onion and minced garlic until soft.
Add the chopped tomatoes, chicken broth, thyme, and oregano to the pan. Stir well.
Place the browned sausages, baby potatoes, and carrots in a casserole dish. Pour the tomato mixture over the top.
Season with salt and pepper to taste.
Cover the casserole dish with a lid or aluminum foil and bake for 45 minutes, or until the vegetables are tender.
Remove the lid or foil for the last 10 minutes of cooking to allow the top to brown slightly.
