Pie Crust
- 2 cups all-purpose flour
- 1 cup unsalted butter cold, cut into cubes
- ¼ cup ice water
Filling
- 4 cups Saskatoon berries fresh or frozen
- 1 cup granulated sugar
- ¼ cup all-purpose flour
- 1 tablespoon lemon juice freshly squeezed
- 1 teaspoon lemon zest
- 1 tablespoon butter cut into small pieces
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine flour and cold butter cubes. Use a pastry cutter or your hands to mix until the mixture resembles coarse crumbs.
Add ice water a tablespoon at a time, mixing until the dough comes together. Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Roll out one disc of dough on a floured surface and fit it into a pie dish. Trim the edges.
In a large bowl, combine Saskatoon berries, sugar, flour, lemon juice, and lemon zest. Pour the mixture into the pie crust and dot with butter pieces.
Roll out the second disc of dough and place it over the filling. Trim and crimp the edges to seal. Cut a few slits in the top crust to allow steam to escape.
Bake for 50 minutes or until the crust is golden brown and the filling is bubbly. Let cool before serving.
