1. Preheat your oven to 375°F (190°C).
2. In a mixing bowl, combine flour and cold butter. Mix until crumbly.
3. Gradually add ice water until dough forms. Divide and chill for 30 minutes.
4. Roll out dough and place in pie dish. Set aside.
5. In a large bowl, mix apples, sugars, cinnamon, nutmeg, and salt. Pour into crust.
6. In a saucepan, melt sugar over medium heat until amber. Add butter and cream, stirring constantly. Add salt.
7. Pour caramel sauce over apples. Cover with top crust, seal edges, and cut slits for steam.
8. Bake for 60 minutes or until crust is golden brown. Cool before serving.
