Ingredients 

Salmon

  • 4 fillets Salmon about 6 oz each
  • 2 tablespoon Olive oil
  • to taste Salt
  • to taste Black pepper

Mango Salsa

  • 1 Mango diced
  • ½ Red onion finely chopped
  • 1 Red bell pepper diced
  • 1 Jalapeño seeded and minced
  • ¼ cup Cilantro chopped
  • 1 Lime juiced
  • to taste Salt

Instructions 

  1. Preheat grill or grill pan over medium-high heat.
  2. Brush salmon fillets with olive oil and season with salt and pepper.
  3. Grill salmon for about 4-5 minutes per side, or until cooked through.
  4. In a mixing bowl, combine diced mango, red onion, red bell pepper, jalapeño, cilantro, lime juice, and salt to taste. Mix well.
  5. Serve grilled salmon topped with mango salsa.
