Instructions
Heat olive oil in a large pot over medium heat.
Add chopped onion and minced garlic, cook until softened.
Add corn kernels and diced potatoes, cook for a few minutes.
Pour in chicken broth, bring to a boil, then reduce heat and simmer until potatoes are tender.
Stir in heavy cream and salmon chunks, cook until salmon is just cooked through.
Season with salt and pepper to taste. Garnish with fresh dill if desired.
