A simple and delicious roasted vegetable medley that's perfect as a side dish.

Vegetables
- 2 cups Broccoli florets
- 2 cups Cauliflower florets
- 1 cup Carrots, sliced
- 1 cup Bell peppers, chopped
- 2 tablespoon Olive oil
- 1 teaspoon Salt
- ½ teaspoon Black pepper
Preheat your oven to 425°F (220°C).
In a large mixing bowl, combine all the vegetables.
Drizzle with olive oil, then sprinkle with salt and pepper. Toss to coat.
Spread the vegetables evenly on a baking sheet.
Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly browned.
Serve warm.
