Ingredients

  • 1 whole Chicken about 4 pounds
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper freshly ground
  • 1 tablespoon Thyme fresh, chopped
  • 1 tablespoon Rosemary fresh, chopped
  • 1 whole Lemon halved
  • 4 cloves Garlic crushed

Instructions 

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels.
  3. Rub the chicken with olive oil, salt, and pepper.
  4. Stuff the cavity with lemon halves, garlic, thyme, and rosemary.
  5. Place the chicken in a roasting pan and roast for 90 minutes, or until the internal temperature reaches 165°F (75°C).
  6. Let the chicken rest for 10-15 minutes before carving.
