Main Ingredients
- 2 cups rhubarb, chopped
- 1 cup sugar
- 1 cup buttermilk
- 1 teaspoon baking soda
- 2 cups all-purpose flour
- 1 teaspoon vanilla extract
- ½ cup vegetable oil
- 1 large egg
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine the rhubarb and sugar. Let it sit for a few minutes.
Add buttermilk, baking soda, flour, vanilla extract, vegetable oil, and egg. Mix well.
Pour the batter into a greased loaf pan.
Bake for about 60 minutes or until a toothpick inserted into the center comes out clean.
