  • 1 cup buttermilk
  • 1 teaspoon baking soda
  • 2 cups all-purpose flour
  • 1 teaspoon vanilla extract
  • ½ cup vegetable oil
  • 1 large egg

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the rhubarb and sugar. Let it sit for a few minutes.
  3. Add buttermilk, baking soda, flour, vanilla extract, vegetable oil, and egg. Mix well.
  4. Pour the batter into a greased loaf pan.
  5. Bake for about 60 minutes or until a toothpick inserted into the center comes out clean.
  6. Let it cool before slicing. Enjoy!
