Add vanilla extract and eggs, one at a time, mixing well after each addition.
Stir in red food coloring until the batter is evenly colored.
In a separate bowl, sift together flour, cocoa powder, and salt. Gradually add to the wet ingredients, mixing until just combined.
Fold in crushed Oreo cookies.
Pour the batter into the prepared baking pan and spread evenly.
Bake for 30 minutes or until a toothpick inserted into the center comes out clean.
Allow to cool completely in the pan before cutting into squares.
