  • 4 red bell peppers
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • to taste salt and pepper

Instructions 

  1. 1. Heat olive oil in a pot over medium heat.
  2. 2. Add chopped onion and minced garlic. Sauté until soft.
  3. 3. Add chopped red bell peppers and cook for another 5 minutes.
  4. 4. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes.
  5. 5. Use a blender to puree the soup until smooth.
  6. 6. Season with salt and pepper to taste. Serve hot.
